Popover Morning

Popovers are the magical breakfast food.

Such humble beginnings, such triumphant results.

Popover Recipe

makes 6, adapted from Martha Stewart's Baking Handbook:

Preheat oven to 425. Grease popover pan with butter.

Whisk together 3/4 c. whole milk, 3 eggs.

Add 3/4 c. flour and a good pinch of salt. Maybe some sugar too.

Whisk until smooth, pour into popover pan and bake for 25-30 min.

No peeking!

While popovers are still in the pan, poke them with a skewer to let steam escape.

Serve them hot, hot, hot with good soft butter and jam.

Popovers! I'm so excited for this recipe. I just finished reading Joan Didion's The Year of Magical Thinking. She mentioned making popovers when she was living in Malibu and it gave me the hankering. I almost went on-line in search of a recipe yesterday, and today I found yours! What a treat!

these look so Yummy. I am going to make them for our special Monday breakfast - the last day of summer and the day before the girls head back to school. I don't know who will enjoy the special grown-up treat more, me or the littles.
